No, this isn't a joke. The Thais seriously put sugar on everything. So if you get Pad Thai, you will get two small packets--one with chili, the other with a white granular substance. The first time I got it I thought it was salt. WRONG!!! Turns out it was sugar. Pretty much everything they eat comes with sugar. Want to eat some avocado? Here, have it with sugar! They were absolutely repulsed when they learned that Americans eat avocado with salt. The only real source of salt here is the fish sauce. Unfortunately, this is also very fishy smelling. I have learned to ignore the smell, simply because without the fish sauce everything I eat lacks any salt. It is a bizarre situation.
As for spice, I am definitely adjusting. I add chili to just about everything I eat. In fact, the other day Pee Neat made pork with holy basil, but made a spicy version and a non-spicy version for me. Well, in the end I was happier with the "spicy" one and really didn't find it that hot. There are still things that are too hot for me to eat, but I eat as much spicy food as some of my Thai coworkers now. Progress!
